Preparation Methods
Basic Beef Jerky
- Chill the beef roast while preparing the marinade.
- Mix marinade ingredients in a bowl, dissolving sugar first.
- Trim all fat and tendon sheathing from the meat.
- Slice meat into 1/4-inch strips, either with or against the grain.
- Submerge meat in marinade or spread it in a glass pan with marinade poured over it. Cover and refrigerate for 4–12 hours.
- Place marinated meat on dehydrator trays, ensuring air circulation. Set dehydrator to 155°F (68°C) and dry for 8–16 hours, turning every 3 hours. Jerky is done when it breaks crisply with no moisture.
Chicken Jerky
- Marinate chicken breast in a mixture of soy sauce, honey, garlic powder, and smoked paprika for 8 hours.
- Slice thin and dry at 160°F (70°C) for 6-8 hours.
Cajun Beef Jerky
- Marinate beef in a mixture of soy sauce, brown sugar, garlic powder, onion powder, and Cajun seasoning for 4+ hours.
- Extrude through a meat grinder.
- Dry at 175°F (80°C) for 4-6 hours.
Chinese Chicken Jerky
- Marinate chicken in a mixture of soy sauce, honey, ginger, garlic, and sesame oil for 8 hours.
- Slice thin and dry at 160°F (70°C) for 6-8 hours.
Curried Chicken Jerky
- Marinate chicken in a mixture of soy sauce, brown sugar, curry powder, garlic powder, and onion powder for 4+ hours.
- Extrude through a meat grinder.
- Dry at 175°F (80°C) for 4-6 hours.
Storage Techniques
Store jerky in airtight containers in a cool, dark place. Use within 3–6 months for best quality. For longer storage, vacuum seal and store in a freezer.
Uses
- Eat as a snack or add to dry soup mixes with vegetables and pulses for emergency meals.
- Use as a high-protein boost during physical activities.
- Include in emergency kits (store in glass and replace every 3 months).
Tips
- For irregularly shaped pieces, use a technique to handle them uniformly.
- Ensure thorough sugar dissolution in the marinade for even flavor.
- Check jerky periodically during dehydration to avoid over-drying.
- Use a dehydrator at 145°F (63°C) for 12-16 hours if available.
- For oven drying, use a fan to improve airflow.
